
Step 2: Layer the Casserole
- Preheat the oven: Set your oven to 375ยฐF (190ยฐC). Grease a 9×13-inch (23×33 cm) baking dish with nonstick spray or lightly oil it.
- First layer: Pour 1/2 cup of enchilada sauce into the bottom of the baking dish and spread evenly.
- Tortilla layer: Place a single layer of tortillas over the sauce, covering the base. You may need to overlap or cut them to fit.
- Beef mixture: Spread 1/3 of the beef and bean mixture over the tortillas.
- Cheese and sauce: Sprinkle 1/3 of the shredded cheese over the beef, then drizzle 1/3 of the remaining enchilada sauce over the cheese.
- Repeat layers: Repeat the process two more times: tortillas, beef mixture, cheese, and enchilada sauce.
- Top layer: Finish with a final layer of tortillas, enchilada sauce, and a generous amount of shredded cheese on top.
