- Prepare the Beef:
- Brown the beef in a large pot to develop flavor. If using ground beef, drain excess fat.
- Sauté Vegetables:
- Add onions, garlic, carrots, and celery to the pot, cooking until tender.
- Simmer:
- Add beef broth, tomatoes, and seasonings. Return the beef to the pot, then simmer until the beef is tender (30–40 minutes for stew meat).
- Add Remaining Vegetables:
- Stir in potatoes and longer-cooking vegetables. Simmer until softened.
- Near the end, add peas, corn, and green beans to preserve their color and texture.
- Adjust and Serve:
- Taste and adjust seasoning before serving. Enjoy with crusty bread!
