Instructions

  1. Prepare the Beef:
    • Brown the beef in a large pot to develop flavor. If using ground beef, drain excess fat.
  2. Sauté Vegetables:
    • Add onions, garlic, carrots, and celery to the pot, cooking until tender.
  3. Simmer:
    • Add beef broth, tomatoes, and seasonings. Return the beef to the pot, then simmer until the beef is tender (30–40 minutes for stew meat).
  4. Add Remaining Vegetables:
    • Stir in potatoes and longer-cooking vegetables. Simmer until softened.
    • Near the end, add peas, corn, and green beans to preserve their color and texture.
  5. Adjust and Serve:
    • Taste and adjust seasoning before serving. Enjoy with crusty bread!
