
Instructions:
- Cook the Bacon:
- In a skillet, cook chopped bacon over medium heat until crispy. Remove the bacon pieces and set aside on a paper towel to drain. Leave 1-2 tablespoons of bacon fat in the skillet (or add olive oil if needed).
- Sauté the Spinach:
- In the same skillet, add the chopped spinach and sauté for 2-3 minutes, until wilted. Set aside to cool slightly.
- Prepare the Creamy Base:
- In a large mixing bowl, combine softened cream cheese, sour cream, and mayonnaise. Mix until smooth and creamy.
- Add Seasoning and Cheese:
- Stir in garlic powder, onion powder, smoked paprika (if using), salt, and black pepper. Fold in mozzarella, cheddar, Parmesan, and half of the cooked bacon pieces.
- Combine Everything:
- Fold the sautéed spinach into the creamy cheese mixture until evenly combined.
- Bake the Dip:
- Preheat your oven to 375°F (190°C). Transfer the mixture to an oven-safe baking dish. Top with remaining bacon and a sprinkle of mozzarella and cheddar cheese for extra gooeyness.
- Bake for 20-25 minutes, or until the dip is bubbly and golden on top.
- Serve:
- Garnish with parsley or chives if desired. Serve hot with tortilla chips, crackers, breadsticks, or fresh veggies like celery and carrots.
