Cheesy Beef and Mashed Potato Casserole

Instructions:

1. Prepare the Beef Layer:

  • In a large skillet, sauté the diced onion in a bit of oil over medium heat until soft.
  • Add the garlic and cook until fragrant, about 1 minute.
  • Stir in the ground beef, cooking until browned and fully cooked. Drain excess fat if necessary.
  • Mix in the tomato sauce, Italian seasoning, paprika, salt, and pepper. Let simmer for 5 minutes. Remove from heat and set aside.

2. Prepare the Mashed Potatoes:

  • If using fresh potatoes, boil them until tender, then mash with butter, milk (optional), salt, and pepper until smooth.

3. Assemble the Casserole:

  • Preheat your oven to 375°F (190°C) and grease a baking dish.
  • Spread half of the mashed potatoes evenly in the bottom of the dish.
  • Add the beef mixture on top of the potato layer, spreading evenly.
  • Cover with the remaining mashed potatoes.
  • Sprinkle shredded cheese generously over the top.

4. Bake:

  • Bake the casserole for 20-25 minutes, or until the cheese is melted and golden brown.

5. Serve:

  • Let cool for 5 minutes before serving. Garnish with fresh parsley if desired.
