Creamy Cajun Chicken Pasta Recipe


Instructions:

  1. Cook the Pasta
    • Bring a large pot of salted water to a boil. Cook pasta according to package instructions until al dente. Reserve ½ cup of the pasta water, drain, and set aside.
  2. Season and Cook the Chicken
    • In a bowl, toss the chicken strips with Cajun seasoning, smoked paprika, salt, and pepper.
    • Heat olive oil or butter in a large skillet over medium heat. Add the seasoned chicken and cook until golden brown and fully cooked (about 4-5 minutes per side). Remove chicken from the skillet and set aside.
  3. Prepare the Sauce
    • In the same skillet, melt the butter over medium heat. Sauté the garlic, bell peppers, and red onion for about 3-4 minutes, or until softened.
    • Stir in the heavy cream, Parmesan cheese, and an extra tsp of Cajun seasoning. Let it simmer for 3-5 minutes until the sauce thickens slightly. If the sauce is too thick, add a splash of chicken broth or reserved pasta water to reach your desired consistency.
  4. Combine Pasta and Chicken
    • Add the cooked pasta to the skillet, tossing to coat it in the creamy sauce.
    • Slice the cooked chicken and add it to the skillet, mixing well to combine everything. Taste and adjust seasoning with more Cajun spices or salt, if needed.
  5. Serve and Garnish
    • Transfer to serving plates or bowls. Garnish with chopped parsley and extra Parmesan cheese for a fresh, savory finish.
