
Instructions:
- Cook the Pasta
- Bring a large pot of salted water to a boil. Cook pasta according to package instructions until al dente. Reserve ½ cup of the pasta water, drain, and set aside.
- Season and Cook the Chicken
- In a bowl, toss the chicken strips with Cajun seasoning, smoked paprika, salt, and pepper.
- Heat olive oil or butter in a large skillet over medium heat. Add the seasoned chicken and cook until golden brown and fully cooked (about 4-5 minutes per side). Remove chicken from the skillet and set aside.
- Prepare the Sauce
- In the same skillet, melt the butter over medium heat. Sauté the garlic, bell peppers, and red onion for about 3-4 minutes, or until softened.
- Stir in the heavy cream, Parmesan cheese, and an extra tsp of Cajun seasoning. Let it simmer for 3-5 minutes until the sauce thickens slightly. If the sauce is too thick, add a splash of chicken broth or reserved pasta water to reach your desired consistency.
- Combine Pasta and Chicken
- Add the cooked pasta to the skillet, tossing to coat it in the creamy sauce.
- Slice the cooked chicken and add it to the skillet, mixing well to combine everything. Taste and adjust seasoning with more Cajun spices or salt, if needed.
- Serve and Garnish
- Transfer to serving plates or bowls. Garnish with chopped parsley and extra Parmesan cheese for a fresh, savory finish.
