Italian Drunken Noodles

Step 4: Deglaze with Wine

  1. Pour the wine into the skillet, scraping the bottom of the pan to deglaze and release any browned bits.
  2. Let the wine simmer for 3-4 minutes, reducing slightly.

Step 5: Make the Sauce

  1. Add the diced tomatoes (with their juices), tomato sauce, Italian seasoning, and red pepper flakes (if using). Stir to combine.
  2. Season with salt and black pepper to taste.
  3. Reduce the heat to low and let the sauce simmer for 10 minutes, allowing the flavors to meld together.

Step 6: Combine and Serve

  1. Return the cooked sausage to the skillet and mix well with the sauce.
  2. Add the cooked noodles to the skillet, tossing them gently to coat in the sauce. If the mixture seems too thick, you can add a splash of reserved pasta water to loosen it.
  3. Garnish with fresh basil leaves and a generous sprinkle of Parmesan cheese. Serve immediately with an optional drizzle of olive oil for extra richness.
