Mexican Queso Fundido


Instructions

  1. Cook the Chorizo:
    • Heat a skillet over medium heat. Add olive oil and cook the chorizo until browned and fully cooked. Remove with a slotted spoon and set aside, leaving the rendered fat in the skillet.
  2. Sautรฉ the Vegetables:
    • In the same skillet, sautรฉ the onions and jalapeรฑo (if using) in the chorizo fat until softened, about 3โ€“4 minutes. Stir in the salsa or diced tomatoes and cook for another 2 minutes.
  3. Prepare the Cheese:
    • Preheat your oven to 400ยฐF (200ยฐC). In an oven-safe skillet or baking dish, layer the shredded cheese. Top with the cooked chorizo and vegetable mixture.
  4. Bake Until Bubbly:
    • Place the dish in the oven and bake for 10โ€“12 minutes, or until the cheese is melted and bubbling.
  5. Serve Hot:
    • Remove from the oven and sprinkle with fresh cilantro. Serve immediately with tortilla chips or warm tortillas.
