
Instructions
- Cook the Chorizo:
- Heat a skillet over medium heat. Add olive oil and cook the chorizo until browned and fully cooked. Remove with a slotted spoon and set aside, leaving the rendered fat in the skillet.
- Sautรฉ the Vegetables:
- In the same skillet, sautรฉ the onions and jalapeรฑo (if using) in the chorizo fat until softened, about 3โ4 minutes. Stir in the salsa or diced tomatoes and cook for another 2 minutes.
- Prepare the Cheese:
- Preheat your oven to 400ยฐF (200ยฐC). In an oven-safe skillet or baking dish, layer the shredded cheese. Top with the cooked chorizo and vegetable mixture.
- Bake Until Bubbly:
- Place the dish in the oven and bake for 10โ12 minutes, or until the cheese is melted and bubbling.
- Serve Hot:
- Remove from the oven and sprinkle with fresh cilantro. Serve immediately with tortilla chips or warm tortillas.
