
How to Make Lasagna Soup
- Cook the Meat:
- Heat olive oil in a large pot over medium heat. Add the ground beef or sausage and cook until browned, breaking it into crumbles as it cooks. Drain any excess fat.

- Add the diced onion to the pot and cook until softened (about 5 minutes). Stir in the minced garlic and cook for 1 minute more.
- Build the Base:
- Stir in the tomato paste and cook for 2 minutes to enhance its flavor. Add the crushed tomatoes, broth, Italian seasoning, red pepper flakes, salt, and pepper. Bring the mixture to a boil, then reduce to a simmer.
- Cook the Noodles:
- Add the broken lasagna noodles to the simmering soup. Cook until the noodles are tender, about 10-12 minutes. Stir occasionally to prevent sticking.
- Prepare the Cheese Mixture:
- In a small bowl, mix ricotta, mozzarella, Parmesan, and parsley or basil. Adjust seasoning with a pinch of salt and pepper.
- Serve:
- Ladle the soup into bowls. Top each serving with a dollop of the cheese mixture. Garnish with extra herbs or Parmesan if desired.
